4 boneless skinless chicken breasts

2 cups McCabe’s Cran with a Twist Granola

1 cup flour

1 to 2 eggs

2 tablespoons olive oil

 

Create an assembly line of 3 plates. Place flour on plate one. Beat two eggs and put on plate two. Pour granola on to a third plate.

Heat oil in large skillet (prefer iron skillet) till bubbly. Do not over cook.

Dredge chicken breast first in flour, then egg, then granola.   Place in pan. Repeat with the additional chicken breasts.

Turn after about 8 minutes when chicken is golden brown. Cook for an additional 6 minutes or until center is not pink.
